This Maple Mustard Salmon is so easy to make you can have it on the table in 25 minutes.
I needed to get something in the oven one evening for dinner and I hadn't thought anything about it all day. So at the last minute I was casting about for ideas on what to serve.
Fish is always pretty quick to cook. I didn't have a lot of sauces in my fridge but I did have some left over orange juice so that got me started.
Orange juice, maple syrup and a bit of Dijon mustard... I couldn't believe how much flavour there was!
This one is a keeper for both its simplicity and flavour.
I served it with these Oven Crispy Green Beans. They take a bit longer than the salmon but they go well with it.
It would be great with this Garlic Steamed Broccoli. It cooks in about 7 minutes so it would fit perfectly with the on-the table-in- 25- theme.
Wine Recommendation
I would serve a light white such as Muscadet Sevre et Maine a Pinot Gris or a Riesling. The sauce is a bit sweet so you don't want anything bone bone dry. A Sauvignon Blanc with a fruity profile (think grapefruit not grassy) would also be good.
On the red spectrum Pinot Noir is usually the salmon pairing go-to. A light Cote du Rhone would also work.
Ingredients
- 2 5 oz salmon fillets
- 1 tablespoon maple syrup
- 1 tablespoon orange juice
- ½ tablespoon Dijon mustard
Instructions
- Preheat oven to 375 degrees. Spray an oven proof dish with cooking spray.
- Mix the maple syrup, orange juice and mustard in a small cup. Pour over the salmon in the oven proof dish.
- Bake about 20 minutes until the salmon is opaque all the way through and flakes easily.
- Serve and enjoy!
