    Strawberry Cream Cheese Bites

    These no bake Strawberry Cream Cheese Bites will have you thinking you are eating Strawberry Cheesecake but with far less guilt!  They are so flavourful they can be dessert on their own. I served them as part of a Royal Wedding Tea Party.

    Royal Weddintg Tea TableThe dry run for our Royal Wedding Tea Party, to celebrate Prince Harry and Meghan's wedding, was a huge hit and these were a big part of the reason for that success!  What gets more British than strawberries and cream? These Strawberry Cream Cheese Bites were part of the dessert tier of the tea trolley along with these Simple Lemon Squares.

    This recipe was inspired by The Kitchen is My Playground but I took out most of the added sugar and replaced it with Amaretto.  If you want to keep them alcohol free replace the amaretto with almond extract.  You will have to taste the mixture to see if the bit of icing sugar in the recipe is enough.  You  may need to adjust it to taste.

    These are so pretty!  I was able to find really big strawberries at Costco.  They were big enough that some of them were about 3 bites!

    I can't wait until strawberry season is in full swing here in Ontario.  I can guarantee these will become a summer patio or picnic staple.

    They are actually a light bite coming in at 20 calories each or 1 Weight Watcher Smart Point. You don't need very many of them since they pack such big flavour!

    They also make a tasty, elegant dessert for your  gluten free friends and family.

    These are so simple that even kids could make them -no stove or oven required!  Just make sure the cream cheese mixture is very smooth so you don't run into any lumps that would plug the piping tip.

    I used a Wilton large tip and disposable piping bag so decorating and clean up were a snap.

    I served a Strawberry Cream White Tea that was absolutely delicious with these as well! That is the tea on the right.  On the left is Black Ginger Peach Tea which was also delicious.

    Ingredients

    • 10 large strawberries
    • 4 oz light cream cheese
    • 1 ½ Tbsps amaretto liqueur you can substitute ¼ teaspoon almond extract
    • 1 tablespoon icing sugar

    Instructions

    • Wash and cut strawberries in half vertically.
    • Beat cream cheese, liqueur and icing sugar until very smooth.
    • Transfer cream cheese mix to a piping bag with a large tip and pipe onto cut side of strawberry. Garnish with coloured sugar if desired.
    • Note: If you don't have a piping bag kit transfer cream cheese to a baggie with a bit of one corner snipped off. Squeeze out onto cut strawberry.
