    Curried Cheese Spread with Chutney

    This savoury Curried Cheese Spread with Chutney topping is addictive and so simple to make.

    I first had this at a Wine tasting.   It was a Monday afternoon..... don't you just love that???  What better way to spend a Monday afternoon!

    Our hostess had quite an array of appetizers from shrimp to nuts and cheese and crackers.  This spread definitely stole the show.  We were all raving about it.  Thank goodness she was happy to share the recipe!

    I will warn you, while it is tasty on its own, the mango chutney topping is what really takes it up a notch into the sublime.  So... my apologies to the 'cottage ladies'.  I proudly set up my cheese plate and crackers.  I double checked my cooler for the topping.  I double checked the cottage fridge... nothing.   I don't know how I managed to leave the topping at home - after all - I had a check list and was ticking stuff off as I added it.  There was the list... there was the tick...????

    If memory serves me I think the first time I had it there was an onion marmalade as a topping.  I think you could add any savoury chutney or marmalade that appeals to you.  Fig jam might be good too.

    You can serve this with baguette or crackers. It actually is amazing with these Artisanal Crackers. You can make them if you have time or buy them in better grocery stores if you want to keep it simple!

    The ingredients are all pretty shelf stable so this will keep in the fridge for at least a week.  I also froze a portion minus the chutney topping and it was fine when defrosted.

    We had this with

    KEN FORRESTER OLD VINE RESERVE CHENIN BLANC 2016 (WO Stellenbosch, South  Africa)   231282 (XD) Score   91  $17.95 (You can check out the LCBO tasting notes via the link above).

    and it was delicious.  It was also delicious with the dry rosés.  I think any lightly oaked white would be a delicious pairing so - lightly oaked chardonnay, Fumé Blanc, Chenin Blanc.

    Ingredients

    • 8 oz light cream cheese
    • 4 oz sharp spreadable cheddar (like McLaren's Imperial Carefully Aged)
    • 1 tablespoon curry powder (1-2 to taste)
    • 2 Tbsps dry sherry
    • ½ cup mango chutney or savoury flavour of your choice

    Instructions

    • Mix all ingredients except chutney in blender or food processor. Process till smooth. Transfer to serving dish and top with chutney.
