Cilantro Lime Dressing is a tangy salad topping that will freshen up many salad bases.
Cilantro can be a very polarizing ingredient. Apparently there is a gene that makes it taste soapy for some but if you don't have the gene then it is a totally different ballgame.
If you have the gene then best skip on to the next recipe right away because cilantro is the signature flavour in this dressing.
I personally find cilantro to be bright and refreshing! It looks like the recipe is calling for a lot of cilantro (and it kinda is....). But I started with less and worked my way up to the 1 cup mark, albeit loosely packed. You can include the stems since you are going to blend this dressing. The stems pack amazing flavour too.
The addition of cumin definitely steers this in the Mexican cuisine direction.
I used it on this Avocado Black Bean Salad and it was delicious. It would be good anywhere you want a Latin style flavour hit. It would be good on lots of salads - especially if there are there are ingredients like tomatoes, peppers or corn involved.
It is a no brainer to drizzle over your favourite taco fillings too.
If you think of like a Mexican Chimichurri then don't forget about salmon or steaks or chicken too. It would make a great 'sauce' drizzled over and around them too.
Cilantro Lime Dressing
Ingredients
- 2 cloves garlic chopped
- 2 Tbsps red onion chopped
- ½ lime juice and zest. See Note 1
- 1 teaspoon hot sauce I used Tabasco
- 1 teaspoon ground cumin
- 1 cup cilantro loosely packed
- 1 teaspoon honey
- ½ cup olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
Instructions
- Mix all ingredients in a blender and blend until uniformly mixed. Dressing will be bright green with flecks of darker green cilantro.
- Store airtight, in the refrigerator up to 1 week.
