Air Fryer Trout with a spicy garlic, onion and a chili crust is crispy and juicy!
Air frying trout fillets is very similar to air frying salmon. Both trout and salmon have about the same amount of fat and tend to cook up in a similar fashion. I would think any treatment you do on a piece of salmon would work on a piece of trout as well.
You will want to tuck the thinner edge of your fillet under to promote even cooking. You don't want the thin edge to get dried out and over cooked.
Mix up your spice mix, toss it with the panko crumbs and pat it on to your fillet. Pat the fillet dry first so the mix will stick nicely.
You are going to roast it at 375 degrees for about 16 minutes but since thickness of fillets can vary ideally you should test for an internal temperature of 140 degrees F.
The Tex Mex-like crust is a great way to introduce trout to a reticent fish eater. My husband is living proof!

Wine Pairing for Air Fryer Trout With Southwestern Spices
Air Fryer Trout is rather versatile because the Southwestern Spices have quite a bit of omph! A rich, full bodied white like Chenin Blanc, a Touraine Sauvignon Blanc or a Muscadet Sèvre et Maine would all be good.
A fruity, spicy red like a GSM, Beaujolais or Pinot Noir would also work.

Equipment
- air fryer
Ingredients
- 1-1.5 lbs trout fillet(s)
- 3 Tbsps panko bread crumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
Instructions
- Pat trout dry and tuck the thin edge of fillet underneath so the thickness is as uniform as possible.
- Mix bread crumbs and spices and pat mixture on top of trout.
- Roast at 375° for about 16 minutes. Check for internal temperature of 140°F.
- Remove from air fryer and transfer to a platter to serve.
