If you can't quite bring yourself to discard half of your sourdough starter at feeding time you are not alone.
After all the weekly care and even naming it (!) it just doesn't feel right to throw half of it out! There is actually a good reason to halve it. Reducing it gets rid of some of the fermentation by products that could potentially turn your starter 'funky' if they get out of hand. But good for you if you realize the potential of the half you faithfully tended. There are things you can do with it.
First of all - you could share with a friend. A mature starter is always appreciated since they get stronger and develop more character over time.
That probably isn't feasible on a regular basis but check out these ideas to use that 'discard'!
