If you are looking for something a little different in a salad - Prickly Pear Vinaigrette should do the trick!
Sweetish and fruity - it is great on spinach salads accented with strawberries or raspberries and nuts.
Anywhere you might consider adding pomegranate seeds for flavour or dried cranberries for a tart/sweet hit you can consider Prickly Pear Vinaigrette.

I served it over a simple Christmas salad of greens with shaved fennel and pomegranate seeds. To do that I had to freeze some of the Prickly Pear Syrup so I could pull it out later. Both fennel and pomegranate are in season at Christmas and the Prickly Pear Vinaigrette complements their delicate flavours perfectly. You don't want a busy or strong salad since or you will lose the fruity nuance of the vinaigrette.

- 2 tbsps prickly pear syrup
- 1 tablespoon Champagne vinegar
- ¼ teaspoon fine sea salt
- ¼ teaspoon black pepper
- 2 Tbsps grapeseed oil
Instructions
- Mix all ingredients except grapeseed oil and whisk to combine. Whisk grapeseed oil in gradually till well mixed. Pour over greens and serve.
- Dressing will keep up to 1 week in the fridge.
