Air Fryer Baked Potatoes come out perfect every time! The strong fan motion in the Air Fryer ensures a crispy skin outside and a tender inside every time.

What Makes This Recipe Special?
- You get beautiful, crispy skin and well-cooked interior every time.
- A baked potato with the skin has about 888 mgs of potassium. I don't know why bananas get such good press regarding potassium, because a banana only has about 422 mgs.
- I think we often underestimate the health benefits of the 'lowly' potato! They are low-fat, low-sodium, relatively low in calories, decent in Vitamin C, decent in fibre, and a powerhouse of potassium!
- The air fryer has a 5-10 minute advantage timewise over a regular oven. Check for doneness after 40 minutes.

Ingredients
- Russet Potatoes are the recommended potato variety to bake. The inside is fluffy. But it is the way the skin crisps up that makes it the winner over white, yellow or red potatoes.
How To Make It
- These are super easy. Be sure to start with well-scrubbed potatoes.
- Pour some olive or vegetable oil in your hand and coat the potato exterior.
- Sprinkle some sea salt on the outer skin (optional) for a delicious boost.
- Bake in the air fryer, turning the potatoes front-to-back at halftime so it isn't the same side of the potato facing the fan the whole time.
More Interesting Facts About Potassium
- Potassium.... it is suggested that it may alleviate high blood pressure and mitigate salt sensitivity. It may also help reduce the risk of stroke, as well as help prevent osteoporosis and kidney stones.
- For an adult, the recommended daily value for potassium is about 2,600 micrograms (mg) for women and 3,400 for men. Pregnant and lactating women need 2800-2,900. And most people don't get the recommended amount in a day.
- Bananas are about 10th on the list of potassium content foods. Compared to a banana's 422 mg, a ½ cup of dried apricots are crazy high (1,101 mgs!); 1 cup of kidney beans logs in at 604 mgs. Ingredients
- 4 medium russet potatoes preferred but you can use any type
- 1 teaspoon vegetable oil
- ground sea salt for sprinkling
Instructions
- Preheat air fryer to 375°
- Scrub the potatoes well. Prick each potato several times. Brush oil all over potato skins.
- Sprinkle coarse salt lightly over potatoes.
- Bake for 40 minutes. Turn potatoes over at mid point. Switch trays if you are using multiple trays.
- Test for doneness and add a few more minutes if necessary till potatoes are tender all the way through.
- Serve with your choice of toppings - butter, sour cream, green onions etc.
