Ingredients
- Pineapple- this really needs fresh pineapple. Canned is not sturdy enough to hold together. But you can either remove the outer crust and core yourself or buy a whole pineapple already prepped.
- You can use regular or light sour cream interchangeably.
- You could use rum instead of tequila if you prefer.

Yes, you could make the cream with whipped cream. It will be a bit lighter. You might want to make a cream cheese/whipped cream combination. See Cream Cheese Frosting for the technique and then use the brown sugar and tequila as per the recipe here instead of white sugar and vanilla. (
You could use your broiler but it won't be quite as 'smoky' as the grilled version.

- 1 fresh pineapple peeled and core and cut into spears
- ¼ cup tequila divided 3 Tbsps + 1 Tbsp
- 1 tablespoon brown sugar
- ½ cup light sour cream
Instructions
- Trim top and bottom of pineapple. Slice vertically to remove the outer crust. Quarter vertically and then slice out the hard core. Cut each quarter in half horizontally and then into 2 " spears. Store spears in the fridge with 3 Tbsps Tequila sprikled over til ready to grill.
- Mix the remaining 1 Tbsps Tequila, brown sugar and sour cream and store separately.
- Place spears on a BBQ mat and grill over medium heat about 3 minutes each side.
- Serve warm with a dollop of the Tequila cream sauce.
