Take Me to the Recipe!

I made these for the kick off of our 2018 BBQ season. Okay – the snow cover was gone and it was easy to get to the BBQ.  Hubby got lots of kudos for BBQing the burgers amidst high winds and freezing temperatures!

Meanwhile… I was all cozy inside baking up these buns! I had a package of 8 commercial hamburger buns but I was anticipating a hungry crowd!  Honestly – I found it easier to make a batch of homemade buns than going to the store for just one item.

I usually have a 10 or 20 pound bag of flour in my pantry at any given time so it is a no brainer if you are home to throw  7 ingredients together and bake up a batch of buns.  I chose to put shredded cheese on top during the last 6 minutes.

Variations

You know me – I am always looking at different angles.  You could top them with sesame seeds, poppy seeds or caramelized onions.  Or you could brush them with this Garlic Butter topping like the Olive Garden Bread Rolls have.

Making the Buns

The dough cycle for my machine takes 1 hour and 30 minutes.  I don’t mind the time if I am puttering around the house anyway. When the dough cycle is done and you are going to divide the dough into bun size portions I like to use a Pastry Scraper and Cutter like this one.  It is great for past making as well when you want clean precise cuts on your dough.

I do not have a precise eye so I don’t wing the ‘equal portioning’ step.  I weigh the dough when I halve it and again when I cut the halves into fours. By the time the fourths go to eighths I free wheel it but you even them I am not guaranteed totally equal portions!

Raw cheese buns on baking sheet

Once the buns are done the second rise you are going to brush the tops with a bit of melted butter. If you are using sesame seeds or poppy seeds or caramelized onions you can sprinkle them on right after the butter brushing.  If using cheese wait to add the cheese until the last 6 minutes of baking so the cheese doesn’t over cook.

These homemade buns were gone before anyone chose a store-bought one!

Instructions
  1. Mix water, 2 Tbsps butter, sugar, salt and egg in a large measuring cup. Mix well and add to the bread machine. (Note -follow the order of ingredients for your bread machine if different from liquid layer, dry layer and yeast).
  2. Add the flour on top of the liquid and spoon yeast into a small indentation in the flour. Do not let yeast touch the liquid layer.
  3. Start the bread machine on the dough cycle. When dough cycle is finished transfer dough from machine to a well floured surface. Shape dough into a rough ball to release any air bubbles.
  4. Line the bottom of a baking sheet with parchment paper. You don't want to over crowd the buns so use a cookie sheet or at least a 9 X 13" pan. (If using a 9 X 13" the buns will join up during baking and you will have to separate after baking. They will look like store bought hamburger buns then!)
  5. Separate the dough in half and then in half again into fours. Then cut each fourth in half to get 8 roughly equal size balls of dough. Place the dough balls on the parchment paper leaving as much room in between as possible.
  6. Cover with a clean towel and leave in a warm spot to rise until doubled in size, about 1 hour.
  7. Preheat oven to 375 degrees. When oven is ready and buns have risen brush the buns with the melted butter.
  8. Bake buns about 12 minutes. Open oven and quickly sprinkle cheese evenly over the top of the buns. Return to oven and bake another 6 minutes.
  9. When done, remove buns from the oven and allow to cool completely.
