Tea Time Raspberry Friands

- ½ cup unsalted butter
- 1 cup almond meal
- 1 ⅔ cups icing sugar sifted
- ¾ cup all purpose flour
- ½ teaspoon baking powder
- ¼ cup shredded coconut
- 5 egg whites
- 24 fresh raspberries
Spray a mini-tart pan with cooking spray. Preheat oven to 325°.
Melt butter in microwave and reserve.
Beat egg whites lightly in a large bowl.
In a separate bowl combined almond meal, sugar, flour, baking powder and coconut. Mix thoroughly.
Add the egg whites and stir to combine. Add the melted butter and stir until thoroughly combined.
Fill tart wells about ⅔ full. Place 1 fresh raspberry in the center of the batter.
Bake 15-20 minutes until a toothpick comes out clean. Top edges should be starting to turn golden but not brown.
Turn friands out after a few minutes to cool on a separate rack.
If serving for a tea consider serving them inside small paper liners since dough can be sightly sticky.
Friands freeze well up to 3 months. Defrost at room temperature.
