Tea Time Raspberry Friands

Dainty, light and airy, these are perfect for an afternoon tea table of snack.

Ingredients

  • ½ cup unsalted butter
  • 1 cup almond meal
  • 1 ⅔ cups icing sugar sifted
  • ¾ cup all purpose flour
  • ½ teaspoon baking powder
  • ¼ cup shredded coconut
  • 5 egg whites
  • 24 fresh raspberries

Instructions

  • Spray a mini-tart pan with cooking spray. Preheat oven to 325°.
  • Melt butter in microwave and reserve.
  • Beat egg whites lightly in a large bowl.
  • In a separate bowl combined almond meal, sugar, flour, baking powder and coconut. Mix thoroughly.
  • Add the egg whites and stir to combine. Add the melted butter and stir until thoroughly combined.
  • Fill tart wells about ⅔ full. Place 1 fresh raspberry in the center of the batter.
  • Bake 15-20 minutes until a toothpick comes out clean. Top edges should be starting to turn golden but not brown.
  • Turn friands out after a few minutes to cool on a separate rack.
  • If serving for a tea consider serving them inside small paper liners since dough can be sightly sticky.
  • Friands freeze well up to 3 months. Defrost at room temperature.
