Artichoke Asiago Dip

Creamy, asiago artichoke dip in minutes. Just a few moments to chop and mix and 20 minutes for flavours to blossom. It keeps well so you can make it ahead and store leftovers, sealed tightly.

Ingredients

  • 6 oz jar marinated artichoke hearts
  • 1-2 clove garlic
  • ½ cup fresh grated asiago cheese can substitute fresh Parmesan
  • ½ cup mayonnaise Increase slightly if you want a creamier texture

Instructions

  • Drain and rinse the artichokes. Chop the artichokes finely.
  • Mince the garlic.
  • Stir all the ingredients together till uniformly mixed.
  • Allow mixture about 30 minutes for flavours to meld.
  • Serve with crackers or focaccia.

The savoury notes here work well with a savoury wine such as Sauvignon Blanc, Pinot Grigio or a Soave.
The flavours here are robust, so a Merlot, Cabernet Sauvignon, Bordeaux blend, Primitivo or a Carmenere would all go nicely here.
