Grilled Pineapple With Tequila Cream
Grilling makes for a smoky, sweet pineapple spear. Now top it with a simple Tequila cream.

- 1 fresh pineapple peeled and core and cut into spears
- ¼ cup tequila divided 3 Tbsps + 1 Tbsp
- 1 tablespoon brown sugar
- ½ cup light sour cream
Trim top and bottom of pineapple. Slice vertically to remove the outer crust. Quarter vertically and then slice out the hard core. Cut each quarter in half horizontally and then into 2 " spears. Store spears in the fridge with 3 Tbsps Tequila sprikled over til ready to grill.
Mix the remaining 1 Tbsps Tequila, brown sugar and sour cream and store separately.
Place spears on a BBQ mat and grill over medium heat about 3 minutes each side.
Serve warm with a dollop of the Tequila cream sauce.
