Cucumber Mango Salad

This refreshing 6 ingredient salad is ready in minutes. Fresh mango, cucumber and red pepper get dressing in an Asian dressing.

Ingredients

  • 1 large English cucumber
  • 1 large red mango
  • ½ sweet red pepper

Dressing

  • 2 tablespoon Mirin (sweet Japanese cooking wine)
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon honey

Instructions

  • Cut cucumber into thirds lengthwise. Julienne the cucumber, finely into uniform lengths.
  • Julienne the sweet red pepper to the same length as cucumber (as closely as possible).
  • Peel and julienne mango to the same length as cucumber and pepper.
  • Combine dressing ingredients and shake well. Toss dressing with salad ingredients and refrigerate.

Notes
If you can't find Mirin use Rice Vinegar instead but increase the honey to taste.
