Low Calorie Banana Blueberry Bread

Ingredients

  • 3 over-ripe bananas
  • ½ cup unsweetened apple sauce
  • ½ cup brown sugar
  • 2 cups flour
  • 2 eggs
  • 1 Tbsp baking powder
  • ½ teaspoon salt
  • 1 ½ tsps cinnamon
  • 1 cup blueberries
  • 1 tablespoon flour

Instructions

  • Preheat oven to 350 degrees. Spray a 9 X 5 " loaf pan with cooking spray.
  • Mix all dry ingredients together in a bowl. Beat the wet ingredients with beaters until banana is pureed and mixture is smooth.
  • Add wet mixture to dry and stir well to incorporate evenly. Put blueberries in a bag with the tablespoon flour and shake them to coat them with flour. Stir in blueberries and mix evenly.
  • Pour into the loaf pan. Bake 55 minutes. Check after 50 minutes. Remove loaf when toothpick in the center comes out clean.
  • All loaf to cool about 15 minutes and then turn loaf out on to a rack to finish. Cooling.

Notes

Variation:  Distribute batter evenly over 4 mini 3 ½" X 6" loaf pans.  Bake 30 minutes. Check and remove from oven when a toothpick in the center comes out clean.
