Low Calorie Banana Blueberry Bread

- 3 over-ripe bananas
- ½ cup unsweetened apple sauce
- ½ cup brown sugar
- 2 cups flour
- 2 eggs
- 1 Tbsp baking powder
- ½ teaspoon salt
- 1 ½ tsps cinnamon
- 1 cup blueberries
- 1 tablespoon flour
Preheat oven to 350 degrees. Spray a 9 X 5 " loaf pan with cooking spray.
Mix all dry ingredients together in a bowl. Beat the wet ingredients with beaters until banana is pureed and mixture is smooth.
Add wet mixture to dry and stir well to incorporate evenly. Put blueberries in a bag with the tablespoon flour and shake them to coat them with flour. Stir in blueberries and mix evenly.
Pour into the loaf pan. Bake 55 minutes. Check after 50 minutes. Remove loaf when toothpick in the center comes out clean.
All loaf to cool about 15 minutes and then turn loaf out on to a rack to finish. Cooling.
Variation: Distribute batter evenly over 4 mini 3 ½" X 6" loaf pans. Bake 30 minutes. Check and remove from oven when a toothpick in the center comes out clean.
