Cilantro Lime Dressing

- 2 cloves garlic chopped
- 2 Tbsps red onion chopped
- ½ lime juice and zest. See Note 1
- 1 teaspoon hot sauce I used Tabasco
- 1 teaspoon ground cumin
- 1 cup cilantro loosely packed
- 1 teaspoon honey
- ½ cup olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
Mix all ingredients in a blender and blend until uniformly mixed. Dressing will be bright green with flecks of darker green cilantro.
Store airtight, in the refrigerator up to 1 week.
Nutrition is per tablespoon.
Note 1: The amount of juice in a lime can vary widely. Aim for about 1 Tablespoon of juice. Fresh is best but bottled can work too.
