Watermelon Granita

Ingredients

  • 2 cups watermelon cubed
  • ¼ cup sweet wine or sparking wine (can substitute any juice or flavoured water as desired)
  • 1 tablespoon fresh lemon juice
  • fresh mint for garnish

Instructions

  • Blend ingredients till smooth. Pour into a shallow non-reactive pan. I used and 8" X 8" glass pan. Allow to freeze about 4 hours. Scrape it with a fork to get some airy, fluffy ice. Garnish with fresh mint. Serve and enjoy.
