Stew
- 2 lbs beef stewing meat
- 2 tablespoon vegetable oil
- 6 medium potatoes peeled and cubed
- 2 yellow onions rough chopped
- 3 carrots peeled and cut into chunks
- 2 turnips peeled and cubed
- 1 cup frozen peas
Sauce
- 1 200 ml can diced tomatoes (7 oz)
- 1 can condensed tomato soup
- 1 284 ml jar Patak's Vindaloo curry paste use ½ the jar if you want less heat
- 2 cups water
Heat the oil in a large skillet and brown the beef over high heat. Do not crowd the beef. Brown in batches if necessary.
Add all the stew ingredients to the slow cooker except the peas.
Mix all the sauce ingredients and pour over the stew.
Cook on low heat 7-8 hours. Add the peas 1 hour before serving.
Serve over rice if desired to reduce the spiciness.
