Caramel Cinnamon Raisin Bread Pudding

- 8 cups cinnamon raisin bread in 1" cubes
- 1 ½ cups milk
- ½ cup cream (or you can use all milk)
- 4 eggs
- 1 tablespoon vanilla
- ¼ cup sugar
- 2 apples peeled and diced (optional|)
- 1 ½ cups good quality caramel sauce
Pudding
Preheat oven to 375 degrees. Spray a 9 X 13" baking pan.
Beat the eggs, milk, cream, vanilla and sugar in a large bowl. When well combined stir in the bread and apple chunks.
Pour into the baking dish and bake 30 minutes. A toothpick should come out clean.
Assemble
In a heat proof measuring cup, gently warm the caramel sauce over low/medium power in the microwave until it is pour-able consistency and warm
When the pudding comes out of the oven prick the pudding all over with a toothpick. Pour ½-3/4 cup of warm caramel over the pudding. Reserve the remaining caramel to serve on the side.
Serve warm.
If you have leftovers reheat the pudding and caramel sauce gently and serve warm.
