Slow Cooker Tuscan Sausage Soup

Sausage and tortellini in a rich broth are the basisi of this delicious Tuscan soup.

Ingredients

  • 4 Italian sausages (casings removed)
  • 1 white onion roughly choppped
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 2 cups beef broth
  • 28 oz canned diced tomatoes
  • 2 cups peeled, diced and roasted roma tomatoes (Optional)
  • 1 cup minced kale or spinach
  • 19 oz can white kidney beans (cannelini) drained and rinsed
  • 1 pkg tortellini (I used chicken/bacon flavor) about 2 cups
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon fennel seeds
  • 2" square chunk of parmesan with rind

Instructions

  • Remove casing from sausage, brown sausage, onion and garlic over medium/high heat. Break the sausage into small uniform pieces during browning process.
  • Add sausage mixture to slow cooker. Add all other ingredients and cook on high about 3 hours. Stir occasionally.
  • Do not include parmesan rind in any individual serving.
