Slow Cooker Tuscan Sausage Soup
Sausage and tortellini in a rich broth are the basisi of this delicious Tuscan soup.

- 4 Italian sausages (casings removed)
- 1 white onion roughly choppped
- 3 cloves garlic minced
- 6 cups chicken broth
- 2 cups beef broth
- 28 oz canned diced tomatoes
- 2 cups peeled, diced and roasted roma tomatoes (Optional)
- 1 cup minced kale or spinach
- 19 oz can white kidney beans (cannelini) drained and rinsed
- 1 pkg tortellini (I used chicken/bacon flavor) about 2 cups
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon fennel seeds
- 2" square chunk of parmesan with rind
Remove casing from sausage, brown sausage, onion and garlic over medium/high heat. Break the sausage into small uniform pieces during browning process.
Add sausage mixture to slow cooker. Add all other ingredients and cook on high about 3 hours. Stir occasionally.
Do not include parmesan rind in any individual serving.
