Vegetable Fried Rice - Superfood?

Is Fried Rice really a Superfood?  Studies suggest leftover rice may have 60% less calories than freshly cooked rice.

Ingredients

  • 1 tablespoon vegetable oil
  • 3 cups leftover rice (cooled at least 12 hours)
  • 2 cups vegetables (see Notes)
  • 1 tablespoon soy sauce
  • 1 egg

Instructions

  • Remove rice from refrigerator and gently break it apart.
  • Heat oil in a large skillet over high heat. When oil is really hot, add the rice. It should sizzle as it hits the pan. Stir quickly.
  • Push rice to the side and break eggs into the hot pan. Stir quickly so they cook without touching the rice. When egg is cooked and broken into small pieces stir into the rice.
  • Add the vegetables and stir to mix and heat through.
  • Add the soy sauce, stir and heat through.
  • Serve and enjoy!

Notes

Use a mixture of finely dices vegetables such as carrots, green onions, red pepper, celery, mushroom and/or peas. Choose according to your preference and what you have on hand.
