Vegan Celery Apple Salad

Four ingredients in this Vegan Celery Apple salad  that  will stick to your ribs!  Stick to your ribs well enough to be a lunch on its own.  

Apples contain pectin which, according to Dr. Oz , is soluble fiber which prevents blood sugar spikes and reduces the amount of sugar and calories absorbed in your bloodstream  This makes apples helpful in managing or avoiding Type 2 Diabetes and may help with weight loss.

I have been making this for years. If you are vegetarian or vegan and want to use the Almond Dressing you get an extra bit of nuttiness and phytonutrients from the Almond Dressing.  If you just want a quick side salad you can use mayonnaise to taste.  I made it that way for years.

I still find a teaspoon of mayonnaise makes the dressing just a bit silkier and more familiar.  Totally optional but I am hooked on that one little teaspoon of mayo!  Use eggless mayonnaise if you want to keep it vegan.

When dicing your celery and apples try to keep the size of the celery and apples the same size in the final dice.  It will give your salad a nice mouth feel.   Uneven pieces will end up having a rustic, coarse feel in your mouth.

This salad is best made just a few hours before serving.  Leftovers will survive for a day if the dressing coats the apple pieces well.

The dried cranberries lend a bit of a sweet/tart hit to salad.

I don’t put any salt or pepper into the salad or dressing directly but  I do like just a quick sprinkle of salt on the finished salad as it is plated. Some people are averse to the taste of salt on fruit… so your choice!

This salad is great year round since celery and apples and dried cranberries are available at any time of the year.   So – it is great for a summer lunch or a winter side salad.

  • 2 cups finely diced celery (about 7 stalks, trimmed)
  • 2 Granny Smith apples diced
  • 1/4 cup dried cranberries optional
  • 1/2 cup Vegan Almond dressing or mayonnaise
  • 1 tsp mayonnaise optional
  • Salt and pepper to taste


  • Clean, trim and chop celery into a fine dice.
  • Peel, core and dice apples into a dice similar size of the celery.
  • Mix in a bowl with Almond Dressing and/or Mayonnaise. Mix in dried cranberries.
  • Refrigerate about 30 minutes before serving to allow flavours to meld.
