Pickled Apples with Cheddar

  • 1/2 cup apple cider vinegar
  • 1/2cup unseasoned rice vinegar
  • 3/4cup water
  • 1/2cup sugar
  • 1tsp salt
  • 1/4tsp black peppercorns
  • 1/2tsp coriander seeds
  • 3 cloves
  • 1 bay leaf
  • sprig of thymeor 1/4 tsp dried
  • 2 applesPink Lady, Honey Crisp, Granny Smith are all good
  • 1Tbsp lemon juice
  • 1/2small red onion
  • 1lb old cheddar
  • crackersI used Sea Salt Rice Crisps
  1. Combine vinegars, water, sugar and salt in a small saucepan over medium heat and stir to dissolve sugar. Add the coriander, cloves bay leaf and thyme. Bring to a boil and simmer for 3 minutes. Set aside and allow brine to cool about 15 minutes
  2. While brine is on the stove thinly slice the red onion vertically. Cut apples in half and remove the core section. Cut each half into 10 thin wedges. Toss the cut wedges in lemon juice to coat them and avoid browning.
  3. Pack the apple slices in a 1 liter jar,alternating layers of apples and onions. Pour brine over, cover and refrigerate overnight.
  4. Transfer pickled apples and onion slices to a small dish and serve with cheddar and crackers.
