Panini Party Anyone?

Ingredients
Turkey, Brie, Pear Panini
  • 3slices deli roast turkey
  • 5thins slices fresh pear or Granny Smith appleSee Note 3
  • 3thin slices Brie Cheese
  • 6 toasted walnut halvessee Note 2
  • 1thin slice red onion
  • Fig Balsamic Glaze
  • mustard and mayonnaiseoptional
Roast Beef, Pepperoncini Panini
  • 3thin slices deli roast beef
  • 2thin slice provolone cheese
  • 1thin slices red onion
  • 2Tbsps sliced green olives
  • mustard/mayonnaise/pestooptional
Prosciutto Panini
  • 4thin slices prosciutto
  • 3thin slices salami
  • 2thin slices provolone
  • thin slices red pepper
  • thin slices pepperoncini
  • mustard/mayonnaise/pestooptional
Ham and Swiss Panini
  • 3thin slices Black Forest Ham
  • 2thin slices Swiss cheese
  • 3thin slices Granny Smith apple or pear
  • thin slices red pepperoptional
  • mustard/mayonnaiseoptional
Roasted Eggplant, Red Pepper Panini
  • 2slices roasted eggplant
  • 3pieces roasted red pepper(from a jar)
  • 2thin slice provolone
  • pesto sauce to taste
  • 2Tbsps toasted pine nutsSee Note 2
Instructions
  1. Slice Italian rolls in half horizontally. Or slice Naan into 2 half moons. Spread condiments of your choice on both sides of bread. Add deli meat, cheese and additions of your choice. Close up panini and grill in a hot panini maker 3-5 minutes until toasty and cheese is melted.
  2. If using a hot skillet or BBQ grill, oil the grill or pan bottom and press the panini down with a heavy skillet or spatula. Flip and press again. Remove when bread is toasty and cheese is melted.
Recipe Notes

Note 1:  Quantities required  will vary with the size of your roll. Use your judgment to ensure fillings are generous and to taste.

Note 2:  Toast walnuts or pine nuts on an oven proof pan approximately 10 minutes at 350 degrees.  Check periodically to ensure they don’t burn.

Note 3:  If using fresh pear or Granny Smith apples wash and slice and put into a bowl of water with a Tbsp of lemon juice.  Remove and drain just before adding to the platter so they don’t turn brown.
