  • 1 small zucchini
  • 10 grape or cherry tomatoes
  • 2Tbsps pine nuts
  • 1 oz shaved parmesan
  • Salt and pepper to taste
  • 1Tbsps olive oil
  • 1/2tsps white wine vinegar
  • 1clove garliccrushed
  1. Toast pine nuts in a dry frying pan over medium high heat til golden brown (about 7 minutes). Stir occasionally and watch they don’t burn.
  2. Slice zucchini into thin strips with a mandolin or vegetable peeler. I cut the stips lengthwise into 3rds.
  3. Slice grape tomatoes vertically and thinly.
  4. Mix dressing ingredients and shake well.
  5. Pour dressing over zucchini and tomato slices and top with pine nuts and shaved parmesan. Allow each diner to salt and pepper to taste.
