Blend ingredients till smooth. Pour into a shallow non-reactive pan. I used and 8″ X 8″ glass pan. Allow to freeze about 4 hours. Scrape it with a fork to get some airy, fluffy ice. Garnish with fresh mint. Serve and enjoy.
