This is a great basic Vegan Almond Dressing that can replace mayonnaise.  You can spice it up – literally- with onion and/or garlic powder, paprika etc.  to give the spin you want for your recipe.

This only takes a few minutes to come together once you have soaked your almonds.  The soaking process is rather forgiving… you can go 3-4 hours at room temperature or 24 hours in the fridge.

The one thing I would recommend for this is a high powered blender.  I have had a Vitamix for a number of years now and although it is expensive to purchase, it is a work-horse of an appliance.  A blender with this much power will give you a blend as silky as mayonnaise in just a few minutes. You don’t want a coarse, gritty feel in your mouth from the dressing. So depending on your machine – blend, blend, blend till you get a silky, smooth sauce.

I buy my raw almonds (skinned) at Bulk Barn.  As a matter of fact… there isn’t really any discernible difference to me between using raw cashews or raw almonds… so pick whichever nut is the cheapest and most readily available.  Make sure the almonds are skinned and raw if using almonds.

If you want to use it as a creamy dressing base you can thin it out to pouring consistency with more almond milk or vinegar or other liquid to flavour the dressing.

Instructions
  1. Cover almonds in water and let soak at room temperature for 3-4 hours or up to 24 hours in the fridge.
  2. Drain almonds and add them to your blender. Pour in the almond milk and all other ingredients. Blend until silky smooth.
Recipe Notes

Add seasonings such as paprika, or onion/garlic powder or smoked paprika to suit the style of your dish.
