Ingredients
  • 2lbs parnsipspeeled and slice into 1/4″ coins
  • 2cloves garlicpeeled
  • 4Tbsps olive oil
  • 4Tbsps milk or creamdivided 2 + 2
  • Salt and pepper to taste
Instructions
  1. Steam parsnips and garlic about 10 minutes til they are tender when pricked with a fork.
  2. Transfer to a food processor with oil and 2 Tbsps of cream. Purée in your food processor. Add the remaining 2 Tbsps of milk or cream only if your mixture is really stiff and you want to make it smoother.
  3. Season with salt and pepper to taste.
  4. Transfer to serving dish.
