Ingredients
  • 2lbs lean ground beef
  • 1medium yellow oniondiced
  • 1large carrotpeeled and grated
  • 1medium zucchiniabout 8″ long, grated
  • 1pkg dry onion soup mix
  • 1/2cup ketchup
  • 1TBSP brown sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix the meat, vegetables and soup mix well in a large bowl.
  3. Spray a casserole dish with cooking spray and pat meat mixture into it.
  4. In a separate cup stir brown sugar into the ketchup. Spread evenly over the top of the casserole.
  5. Bake at 350 degrees 50-60 minutes. Exact time will depend on the size of you dish.
  6. When meatloaf is done remove from the oven and allow to stand 10-15 minutes to re-absorb juices. If you have excess juice or fat drain excess before serving.
