Ham and Egg Cups

These Ham and Egg Cups are handy little grab and go things. You can have them right out of the oven or you can make them ahead and reheat gently.

Deli ham serves as the cup for these mini-quiches. So they are low carb and low calorie, weighing in at 1 Smart Point each.

They are also gluten free so they will work for all kinds of people and their diets.

They are basically spinach quiches and you can add an herb or your choice it you like.

You can spice them up with some fresh herbs or some red pepper flakes if you like.

You can eat them with your fingers like a muffin. After they baked they are firm.

Ingredients
  • 12 slices thinly sliced, round deli ham
  • 7 eggs
  • 3 egg whites
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup fresh spinach
  • 6 oz reduced fat cheddar cheese, shredded divided 3 + 3 oz.
  • 1/4 tsp tsp red pepper flakes optional
  • 1 Tbsp fresh herbs minced, optional

Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a muffin pan with cooking spray. Center a piece of deli ham in each muffin cup.
  3. Reserve 3 oz of the shredded cheddar. Finely chop spinach and reserve.
  4. Put remaining ingredients in a blender or food processor and blend till well mixed. Stir in the 3 oz of shredded cheddar and the spinach. Pour egg mix into the ham cups in the muffin tins. You will need to hold the ham cups open with one hand while you pour the egg mixture. Don't worry if some seeps outside the ham cup. It won't stick to the ham after it is cooked.
  5. Divide remaining shredded cheddar evenly over the muffin cups.
  6. Bake about 20 minutes till ham cups are set.
