One of the things I noticed travelling in France and Italy is the many of the best dishes and recipes use only a few basic ingredients but each one is a perfect example of their kind.
One of the best salads I ever had was a simple salad of baby arugula with shaved parmesan drizzled with olive oil and some black pepper. Maybe the open air restaraunt square in Nice had something to do with it but it was delicious!
European lettuce is typically softer and more flavourful than our North American. I am not sure why – is ours mass produced? I think European lettuce is usually what we call butter lettuce. In any case I find butter letttuce or organic baby greens in North America are closest to European lettuce.
All this to say – this Fresh Zucchini Salad was inspired by the simplicity of European salads! Fresh zucchini in season, tomatoes in season, toasted pine nuts all shine in this. The dressing is just oil and vinegar with some fresh garlic. And… you won’t believe how a bit of salt and pepper once it is served brings out all the best in the ingredients!
