Prepare puff pastry according to package instructions. They usually recommend 8 hours defrosting in the fridge or 2 hours at room temperature. I did not have to roll mine out but you may have to depending on what brand you have.
Preheat oven to 425 degrees. (or whatever your puff pastry recipe calls for).
Brush each pastry top with 1 Tbsp olive oil each. Brush right out to outer edges.
Sprinkle goat cheese evenly on one pastry. Sprinkle grated soft cheese on the other.
Distribute half the olives, peppers and onions evenly over each pastry sheet.
Bake according to instructions for your puff pastry. Mine was 15-18 minutes.
Cool for a few minutes, cut into squares with a pizza wheel and serve!
